Potatoes: Why Are They So Awesome? Reason 1: Vitamins & Minerals Potatoes might seem a dull and lifeless root, that doesn’t contain much of anything but my friend you would be mistaken. Potatoes are packed full of many beneficial vitamins and minerals that are necessary for human life. Potatoes are full of many B vitamins, vitamin C, Iron, Magnesium, Zinc, Copper, Sulphur, Potassium, and Sulphur. Making it a powerhouse for human health, and has even been shown to outrank onions, carrots in terms of antioxidant activity. Potatoes have even been shown in studies to be able to reduce inflammation, and help with cardiovascular health, most likely because of the high amounts antioxidants they contain. There is one catch however when it comes to obtaining the great nutrients that these tubers contain, and that is that most of the beneficial vitamins and minerals are found in the skin. Yes I know we have all had that baked potato that we tried to eat with the skin and got nothing but a mouthful of what tasted like pure delicious dirt. The best thing that you can do for that is number one clean your potato before you cook it, next you should try different kinds of potatoes (I have found that russet potatoes are the ones that taste like dirt most often), and finally try cooking them differently occasionally you will see that the skin can be the best part! Reason 2: Starch Starch isn’t just something that you use to get the wrinkles out of your jeans when you iron them. Starch is a carbohydrate that is found in many plants, and is broken down into the main fuel source that our bodies use called glucose. Potatoes are high in a specific kind of starch called resistant starch. The reason it is called resistant starch is because it isn’t broken down in the gut, but makes its way to the microbiota and is a good form of prebiotic to feed the bacteria of your microbiome. Resistant starch has been shown to help with helping improve insulin sensitivity, digestion issues, risk of colon cancer, help with absorption of minerals, and increases butyrate in the microbiome. Potatoes regularly have a good amount of resistant starch in them, but an easy way to allow them to gain even more is by cooking them and letting them cool down. No you don’t have to eat cold potatoes, because even when you heat them back up the resistant starch remains and you can still get the beneficial effects. Reason 3: Satiety Potatoes above other carbohydrates are extremely satisfying when it comes to overall satiety. What I mean by this is that you stay full for longer and have less hunger after consuming potatoes rather than other carbohydrate sources. I have found this to be true on a personal level. I have tried to use the classic chicken and rice bodybuilding diet, and found myself starving after about an hour after eating even though my calories were in point. Once I got away from that and started to eat potatoes with my main meal however this all changed. Once I get finished with my main meal of the day that contains a hefty portion of potatoes I don’t even think about food for hours on end because I am completely satisfied, but don’t just take my word for it, let’s look at what the research says. In one study that looked at the satiety index of 38 different foods boiled potatoes actually scored the highest. It’s also been shown that consuming potatoes with a meal resulted in less overall energy (caloric) intake than a meal with either rice or pasta. So if you are trying to stay satisfied on a low calorie diet, or are trying to maintain your weight but still find yourself being hungry I highly recommend putting some good organic potatoes into your diet. What They Do Not Have Makes Them Awesome Too! In a lot of foods, such as nuts and many leafy greens, there are things called antinutrients. Antinutrients are things in certain foods that have an adverse effect on the absorption of key micronutrients in the body, or bioenergetic system of the body. Avocados are one of the best raw food sources of fat that we have access to on a regular basis. With 71% being monounsaturated fat, 16% being saturated fat, and 13% being polyunsaturated fatty acids these guys know how treat your body. (1). Even with the polyunsaturated fatty acids being present in avocados it is hard for them to become rancid and start producing free radicals because they also contain a decent amount of vitamin E, which helps keep the polyunsaturated fats from oxidizing. (2). The monounsaturated fatty acids have been shown to help reduce inflammation.(3,4). It has also been shown to be a powerful down regulator of many markers of chronic disease, and even cancer. I just assumed that avocado oil was the same and stuck to my pure saturated fat to cook with, which hasn’t been too bad. Then I found the answer, just out of curiosity more than anything I decided to see what oil has the highest smoking point. The smoking point is the temperature at which the oil begins to smoke which is an indicator that it is no longer stable and is oxidizing producing free radicals. Avocado oil actually has the highest smoking point of all oils, making it the safest oil to cook with period.(11,12). With the smoke point of avocado oil being 520 degrees fahrenheit, this oil is perfect for any kind of cooking. Whether you want to sear a nice grass fed steak, or fry some eggs up, avocado oil can do the trick. There is one caveat however, quality does matter because during the process of making the oil if there isn’t proper care taken then the integrity of the oil can be effected and allow for free radicals to be produced when under high heat. So when looking for this magic oil, make sure that you are buying organic, avocado oil. The oil means that there is a certain level of acidity that the oils have to pass under, and thus very little if any chemicals are used to extract the oil from the avocados. (13). For generations, we have assumed that hangovers are an inescapable consequence of alcohol. The average alcohol-drinker consumes somewhere between 7 and 14 drinks per week, leaving us susceptible to the dreaded “morning-after’s.”The splitting headache, the wrenching nausea, and the cloudy brain become part of an assumed routine for some. In a world where friendships are made and business is done while drinking alcohol, the hangover slips its way in as a casual part of our lives. This has been acceptable for centuries, but have you ever asked yourself, “Why do I put up with this?” Technological advancements in software, medicine and currency seem to be made each week, so (until now) why hasn’t anyone solved something as seemingly simple as the hangover? We believe the answer stems from a general lack of knowledge surrounding the answer to another question… What exactly is a hangover? A hangover is not one thing. What we call a hangover is not an actual medical condition, because a hangover is not one condition. A hangover is the result of several body processes occurring in response to drinking alcohol. In order to cure or even prevent a hangover, each one of these body processes must be addressed accordingly. Let’s run through each of these body processes: Step One: Dehydration For a very long time, this was thought to be the sole cause of a hangover. Alcohol is much harder for the body to process than regular food and drink, therefore your demand for water greatly increases on a “night out.” To make matters worse, ingesting alcohol has detrimental effects on your hypothalamus, which is the part of your brain responsible for the regulation of the hormone vasopressin. When vasopressin goes off the hinges, you urinate more frequently, diluting your concentration of electrolytes causing even more dehydration. Step Two: Toxic Waste Production Alcohol metabolism has not been heavily studied, but here’s what we do know: Alcohol metabolism in your liver produces toxic by-products called acetaldehydes. Your body has natural acetaldehyde dehydrogenase and glutathione stores that turn these toxic substances into acetate, which is thought to be harmless at low levels. When your glutathione storage runs out, this leaves the toxic substances in your body, which have been shown to cause flushing, sweating and vomiting, much like when any other toxic substance enters your body. Step Three: Immune System Failure The consumption of alcohol also puts a heavy load on your immune system. Studies show that there are significant changes in immune system parameters during a hangover, namely increased concentrations of cytokines, which are released during an inflammatory response. It is likely that these cytokines are the culprit behind many cognitive effects of alcohol, such as memory impairment and mood changes. Cerebral cytokines have also been shown in animal studies to increase sickness behavior such as weakness, inability to concentrate and reduced appetite. (Sound familiar?) Step Four: The Glutamine Rebound The next step happens after you have already gone to sleep. The cause of nausea and vomiting is often attributed only to alcohol quantity, but have you ever slept so poorly you felt sick? Vomiting while drinking is a result of your body rejecting the pseudo-poison that you just ingested, but once it’s all processed, much of your hangover nausea is actually from poor sleep quality. This is due to the Glutamine Rebound. When someone is drinking, alcohol inhibits one of the body’s natural stimulants – glutamine. When the drinking stops, the body will immediately begin producing more glutmine to catch up. This “Glutamine Rebound” almost always happens while you are asleep, stimulating the body and keeping you from reaching your deepest sleep all night. The resulting daytime sleepiness is what accounts for any sensitivity to light and general weakness you may feel in the morning. You must attack each of these pain points individually to prevent or cure a hangover. Many hangover cures try to treat a hangover as one entity, and often lean on dehydration as the root cause. Dehydration certainly plays a role in the hangover, but by simply supplementing electrolytes you are solving about 50% of the problem. Egg Benefits Whole eggs, specifically egg yolks, are one of the most nutrient dense food sources that we have in today’s society coming in a close second behind or-gan meats. Free Range vs Conventional Obviously as a person who likes to eat meat I am seen by many people to be a heartless savage who doesn’t mind taking the life of innocent creatures, but that is not the case at all. I take a look at the way that my food is raised and taken care of. I make sure I obtain my food from humane sources that take care of their animals right up to the day of . I view eating meat as a part of life. These animals have been put here in order for us to survive off of them. Conventional eggs are the opposite of what I look for , the chickens are raised in cages, fed horrible inhumane diets (possibly other chickens), and are pumped full of antibiotics and hormones to keep them producing eggs year round, the antibiotics are used because the animals are packed so tightly together without the ability to move that they can’t stay healthy and get chronic infections. Free range eggs on the other hand are different. The chickens are allowed to roam freely on open land, they get to enjoy the sunshine, and they are not pumped full of harmful chemicals that get into the eggs and meat and then back to the consumer. They are healthy and happy up until the day that they are taken to. This different process of raising the eggs can be seen not only by the eye by the yolk but also in the nutritional composition of the egg as well. Just looking at a free range healthy egg versus a conventional egg you tell there is something different going on. Mainly by the yolk. In a free range egg the yolk is a dark rich yellow, almost an orange color that looks packed with all the good stuff. Conventional eggs have a light yellow, almost partly clear yolk in many cases that makes them look completely void of anything. Free range eggs have been shown to naturally have more vitamin D in them, which makes sense because the chickens that laid those eggs were able to get more from being out in the sun. They also have been shown to have more vitamin E in them, which in term makes the omega-3 content in the egg a lot safer to consume. This is because vitamin E helps the polyunsaturated fatty acid keep from breaking down into free radicals.
